Charlie's Perfect Wings
To make Charlie's perfect wings, start by cleansing and drying the wings. Season to taste with your favorite seasonings. Lightly flour the wings in a bowl, shaking off the excess. Heat a deep fryer to 350 degrees and cook the wings for 13 minutes. Remove the wings from the fryer with a skimmer, shaking off the excess oil.
Sauce Preparations: While chicken is frying, heat sauce to boiling point then pour into bowl. Once excess oil is removed from wings, dip them in the warmed bowl of sauce; gently shake off sauce. Re-dip for a richer flavor.
